a chef with over 20 years of experience in some of the world’s top kitchens. He trained in 2 and 3 Michelin-star restaurants across Paris, London, and New York, working alongside icons like Thomas Keller, Mauro Colagreco, Claude Bosi, and Guy Martin.

He’s also spent time in bakeries, pubs, and large venues doing thousands of covers a day, managing teams of over 60 chefs.

Guillaume built this course to share the systems, tools, and mindset that helped him run profitable, consistent, and sustainable kitchens, without burning out or stressing every time he stepped away for a day off.
